(Very Simple) Borscht for Two

2 cloves garlic minced, or 3-4 garlic scapes chopped
3-4 scallions, or 1 small onion
5-6 small beets, sliced
salt & pepper
4 cups chicken broth
dill
sour cream

In a pot, heat some butter and garlic with scallions and beets. Cook until the veggies start to caramelize and become fairly tender. Season with salt & pepper. Add the broth and chopped beet tops. Bring to a boil, reduce heat and simmer for about 10 minutes. Blend if desired, otherwise go ahead and serve with your dill and sour cream.
