Quick Garlic & Potato Skillet

6 small new potatoes, thinly sliced
2 garlic scapes
1 scallion or onions
1 Tbsp. butter
summer squash (optional)

Adjust quantities as you see fit. Melt some butter in a heated frying pan.  Throw in some chopped young onions including the greens. Saute that for a minute or two and add in the new potatoes, along with your garlic scapes and sliced summer squash (zucchini or pattypans). Cook on medium-low heat until the potatoes are tender and season with salt and pepper. Serve with fresh parsley on top and a side of your salad greens.
