1/4 head of cabbage, shredded
3 carrots, grated coarsely
1/4 cup canola oil
2 Tbsp. fresh lime or lemon juice
3 Tbsp. chopped fresh cilantro or parsley
1/2 tsp. cumin
coarse salt & pepper
In a large bowl, combine the cabbage and carrots. Drizzle the mixture with the canola oil and lime juice. Sprinkle with cilantro, cumin, ¼ tsp. salt and some pepper. Toss well.
