Bruschetta

1 – 2 tomatoes, coarsely chopped (or a pint of cherry tomatoes)
1 tiny onion, chopped fine
1-2 cloves garlic, minced
cilantro
olive oil
balsamic vinegar
salt & pepper

Combine tomatoes, onions and garlic. Add or omit cilantro depending on your taste. Slowly add some olive oil and balsamic vinegar, depending on how many tomatoes you used. Season with salt & pepper. Naturally, this goes well on some toasted bread with parmesan cheese sprinkled on top or spooned on top of crackers.
